Recipe: "Stove Top" Beef & Veggies over Rice
This is a simple meal that can be quickly prepared and served throughout the week for those on-the-go students or busy bees. All of the ingredients used in this recipe came from the store, so you can come in and buy them or feel free to use whatever veggies are in your fridge. I hope this recipe appeals to you and inspires you to get creative in the kitchen!
Ingredients:
1-2 heads of broccoli
1 red bell pepper
1 pack mushrooms
1-2 tablespoons hemp seeds
2 cups white rice
1-2 tablespoons tamari
1 red onion
1 pack Tofurky Meatless Ground "Beef"
3 cloves garlic
1 bunch spinach
Instructions:
Start rice in rice cooker or over the stove. If using a rice cooker, you can also use that to steam the broccoli.
Make sure to rinse vegetables well in vinegar-water. While rice is cooking, slice broccoli, red bell pepper, mushrooms, and garlic.
Using the oil of your choice, heat pan up, then add garlic. Cook for a few minutes. Add mushrooms first, then peppers and onions until they begin to sweat. Add meatless "beef" and cook on medium heat until thoroughly cooked through.
Once rice is finished and broccoli is steamed, assemble the bowl with rice and broccoli on one side, a good portion of veggies and "meat" stove-top mix, top with fresh spinach and hemp seeds. I like to add tamari for a little salt.
