Coconut Mango “Sticky” Oats
A twist on a classic dish! Coconut Mango Sticky Rice is a beloved Traditional Thai Dessert. Traditional sticky rice is made by steaming glutinous rice in a special cone shaped bamboo basket. I’ve substituted the rice for oats and can be eaten for breakfast or at any time of the day. My family really enjoys this recipe and is especially popular with kids!
Ingredients
For Oatmeal:
1 cup quick cooking oats
2 cups water
Pinch of salt
For Toppings:
Cubed fresh mangoes or frozen if fresh is not available
Coconut milk
Black sesame seeds
Hemp seeds
Agave or choice of sweetener
Directions
For the oats:
Pour the 2 cups of water and 1 cup of oats into a pot. Add a pinch of salt. Turn heat on to medium-high. When oats start to thicken, reduce heat to low and stir occasionally for 3-4 minutes. Turn heat off and add desired amount of coconut milk, stir.
Toppings:
Ladle oats into a bowl and top with fresh cut mangoes
Sprinkle on sesame and hemp seeds. Finish with a drizzle of Agave. Enjoy! :)
