BBQ Tofu Tacos
It doesn’t have to be a Taco Tuesday to enjoy delicious tacos! These tofu tacos make a delicious vegetarian option for taco filling, and are very easy to make. Have fun making your own version by adding any extra veggies or spices!
Ingredients:
1-2 containers (12-24 oz) of firm tofu
½ a bottle of Annie’s Organic BBQ sauce (or marinade of choice)
2-3 red bell peppers
1-2 jalapeno peppers
2 tablespoons of olive oil (or cooking oil of choice)
1 can Amy’s Organic refried black beans
Corn or flour tortillas
*Optional:
Hot sauce or salsa of your choice
Shredded cheese
Instructions:
Cut tofu into small cubes, place in Pyrex pan and coat with marinade or BBQ sauce. Let tofu marinate for 15-30 minutes.
Prep vegetables, dicing all peppers into small pieces.
Heat olive oil in frying pan over medium heat. Once oil begins to separate, add peppers to pan. Sautee for about 5 minutes, stirring frequently.
Meanwhile, heat beans in sauce pan on medium-low heat for about 5 minutes
Add marinated tofu to pan with peppers. Stir frequently until tofu is lightly browned.
Spoon tofu and peppers mixture in a cooked tortilla and enjoy your tacos!
*For added flavor, sprinkle tacos with shredded cheese and add a little hot sauce or salsa.
