30-Minute Vegan "Pho"
Fall is here, and that means soup weather is approaching! It’s essential to have enough time to prep and prepare a nutritious meal, but some soup recipes are very time consuming. That’s why we love this 30-minute “pho”- style recipe.
Pho is a Vietnamese-style soup consisting of a broth flavored with cloves, cinnamon, ginger, garlic, and star anise. We decided to make our pho vegan, (traditionally pho is made with beef or chicken) but the great thing about this recipe is you can alter it however you like!
*Makes about 5 servings
For the Pho broth:
(2) 32 oz containers of vegetable broth (about 7-8 cups)
1 large onion (any variety)
4 whole star anise
3 whole cloves
1-2” of fresh raw ginger
5 cloves of garlic
1 cinnamon stick
Toppings:
(Anything you like)
1 package of rice noodles of your choice (we used Hakubaku organic Ramen)
Fresh basil (Thai)
Fresh green onions
Sauteed mushrooms (any variety)
Hot peppers (we used jalapeno)
Hot sauce to taste
Tamari and/or liquid aminos to taste
Steps:
Cut the onion into quarters, slice ginger into coins (no need to peel), and chop the cloves of garlic.
Add vegetable broth, star anise, cloves (spice), cinnamon stick, ginger, onion, and garlic to a large pot and bring to a simmer.
Cover and let simmer for about 30-35 minutes
Meanwhile, prep your toppings: chop and saute any of the vegetables you chose, etc.
Follow the package instructions for the rice noodles or cook until al dente. Remember to drain, and rinse with cold water to prevent from them cooking further.
When everything is complete, fill your bowl with the noodles, top with broth, and arrange your toppings however you’d like! Simple as that!
