October Recipe: Cauliflower Rice, Zucchini, & Corn Burritos
This is a simple and low-carb meal that is still filling. You can add beans, tofu, tempeh, chicken, or any other kind of meat/substitute to make it even more filling. This is an easy and quick meal that is still tasty and satisfying. Perfect for students or busy professionals. Don’t forget the hot sauce!
Ingredients:
3 cups finely chopped cauliflower
2-3 diced zucchini
1 can corn
½ yellow onion
1 teaspoon cumin
1 teaspoon chili or cayenne powder
I tablespoon salt
1 pack whole wheat tortillas
Instructions:
Saute onion over medium heat until translucent (around 5-7 minutes).
Add zucchini, then saute with onions, adding all spices and salt.
Add corn last and leave just long enough so that it heats.
