Pitaya Power Bowl


There are so many reasons to love summer. The days get longer, our skin turns tan, we have the magnificent Pacific ocean at our fingertips...throughout the season I enjoy making smoothie bowls either for breakfast, a snack or even dessert. This Pitaya bowl is not only beautiful - I love the bright pink color of the tropical fruit - it's also loaded with nutrients that will make you feel great.

EQUIPMENT NEEDED:

A blender

INGREDIENTS:

  • One pack of frozen Pitaya Plus Dragon Fruit puree.

  • 8 ounces of coconut water (can be replaced with any fruit juice you prefer, or simply water)

  • 1 banana

  • 5-7 strawberries

  • a handful of blueberries

  • 2 tablespoons of shredded coconut

  • 1/3 cup of almond vanilla granola

  • soaked chia seeds

This recipe is for one serving, but you can easily create more servings by adding more of each ingredient.

Before you begin mixing all your ingredients, add 2-3 tablespoons of chia seeds to a bowl, and add 1/4 cup of water. Stir up the seeds rather quickly for about a minute and let that sit while you make the bowl. The chia seeds will absorb the water and take on a somewhat gooey texture.

And the rest is so easy! Simply blend the dragon fruit puree with 1 cup of coconut water, or whatever juice you prefer. Once you get your smoothie consistency, poor the contents into a bowl. Slice up the banana and strawberries, add the blueberries. Add the shredded coconut, and granola. Finally add the soaked chia seeds. Now you have a finished product of a yummy, filling fruity bowl, packed with beneficial nutrients.
