Creamy Lime Kale Salad topped with Coconut Tempeh
This salad is delicious, great for you, and most importantly, its super easy!
INGREDIENTS
2 cups of kale ( break leaves into bite sized pieces from the stem)
1 teaspoon of olive oil
2 tablespoons of coconut oil
1 half of a lime (feel free to use entire lime if you wish)
Approximately half a package of tempeh
2 tablespoons of Veganaise
a dash of salt, pepper and cayenne
1 tablespoon of toasted sesame seeds
INSTRUCTIONS
After you have torn the kale up into bite size pieces, prepare the kale by massaging it with lime and olive oil. Massage until the kale turns a darker shade of green and it doesn't feel crunchy. Set aside.
Cut the tempeh into small squares and fry in a hot pan with the coconut oil. Fry the tempeh for 10 to 15 minutes, or until the tempeh gets a crunchy outside on all sides.
Prepare the dressing by combining the Vegainise, lime juice, and adding a dash of salt, pepper and cayenne (of course feel free to add more cayenne if you want a spicier dressing)
Combine all the ingredients and top with toasted sesame seeds.
