Chocolate Dipped Pretzels & Orange Segments... for school lunches!

Ingredients
6 oz semi sweet chocolate ( I used 3, 2oz chocolate bars)
1 1/4 tsp coconut oil
2-3 mandarins
1 cup plain or salted pretzels
A medium pot or sauce pan
A heat proof bowl
Wax paper
Tray
*Make sure heat proof bowl fits snuggly onto your pot or sauce pan. Steam should be trapped under bowl.
Prepare chocolate
Heat chocolate in a double boiler or microwave
Prep:
-Peel your oranges and separate into single slices, set aside
-Line a tray with parchment paper
-To melt chocolate in a double boiler, fill your medium pot or sauce pan with water to about a quarter way up
-Bring your water to a boil and then reduce to a simmer. Your water should remain at a low simmer.
-Place your chocolate into the heat proof bowl and then fit your bowl on top of your pot.
-Pour in your coconut oil and stir.
-Watch your chocolate and stir until chocolate is completely melted and smooth. Turn off heat.
-With an oven mitt take your bowl out of your pot and transfer to counter.
-Dip your oranges in the melted chocolate and place onto tray
*(optional topping; you can sprinkle with shredded coconut or sea salt)
-Continue with pretzels
-Place tray in freezer for 20 minutes, then take out and transfer to a container or plate covered with saran wrap. Place your oranges and pretzels into the fridge to store until ready to use. Oranges will keep for 2-3 days in fridge
