Spring Rolls with Peanut Sauce

These spring rolls are quick and easy to prepare. A fun and interactive way to spend the afternoon with the people who live with you. Did I mention this peanut sauce is sooo good you’ll be licking your plate clean! There’s no better way to spring forward into the season with these deliciously, fresh, super yummy spring rolls! Make these spring rolls a complete vegan appetizer and leave out the fish sauce in the peanut dipping sauce!
For Peanut Sauce
1/3 cup peanut butter
1/2 cup rice vinegar
1/4 cup tamari
2 Tbsp grated ginger
1 Tbsp fish sauce
2 garlic cloves
2 Tbsp brown sugar
Add all ingredients to blender and blend to a smooth consistency
Spring Roll Filling
Half a carrot grated
Half a cucumber, peeled and cut lengthwise into strips
Hand full of sprouts
Wildwood Baked Tofu* cut into strips
Mint leaves
1/2 cup shredded purple cabbage
1 pack Rice paper wrappers
To make:
line up 2 plates, one with water
One at a time soak your wrapper for a few seconds and set on the second plate. Massage gently into wrapper for a few seconds and begin to add filling. Do not over fill and move quickly. Fold the bottom half of wrapper over filling and seal filling tightly. Fold in the edges towards middle and roll like a burrito.\
